					<description>Sylvia: below is a rough approximation of my sriracha recipe. I just kept tasting it as I went along until it tasted like what I wanted it to. 

Ingredients:
~2.5 cups of whole dried red chillies. 
~1/8 cup of water and 1/8 cup white vinegar
~6 cloves of garlic
~1/4 cup of sugar
~3 tbsp of salt (I used salt crystals)

1. Soak chilli in water+vinegar solution for about 5 days, turning the chillis over once a day to let it soak in the solution. 
2. Add everything to a blender (including the vinegar solution) and grind it until you get the desired consistency. I added an additional 1/2 cup warm water to get it into a creamy paste.

I didn't separate the chilli skins from the meat. I ground it all together.  </description>
